🔪 Preparation (Pre-Prep Guideline)
- Cut vegetables into uniform 1–1.5cm cubes for even cooking.
- Blanch cauliflower florets in hot water for 3 minutes for better texture & hygiene.
- Keep onions chopped & tomato puree ready.

🍳 Cooking Method (With Exact Timings)
Step 1 — Sauté Base Aromatics (4–5 min)
- Heat 25ml oil in a pan at medium flame.
- Add 100g onions → sauté for 3–4 minutes until translucent.
- Add 10g ginger-garlic paste → sauté for 1 minute until raw smell goes away.
Step 2 — Cook Tomato Base (4 min)
- Add 120g tomato puree.
- Cook for 3–4 minutes on medium-low heat until oil separates.

Step 3 — Dry Spice Blooming (30 seconds)
Add the spices:

- Mix and cook on low flame for 25–30 seconds.

- Carrot (100g)
- Peas (70g)
- Cauliflower (150g)
- Beans (50g)

Step 5 — Simmering & Cooking (12–14 min)
- Add 200–250ml water.
- Cover and cook for 12–14 minutes on medium flame.
Check: Fork should pass through potato easily.

Lower the flame and add:
