🔪 Preparation (Pre-Prep Guideline)

  1. Cut vegetables into uniform 1–1.5cm cubes for even cooking.
  2. Blanch cauliflower florets in hot water for 3 minutes for better texture & hygiene.
  3. Keep onions chopped & tomato puree ready.

🍳 Cooking Method (With Exact Timings)

Step 1 — Sauté Base Aromatics (4–5 min)

  • Heat 25ml oil in a pan at medium flame.
  • Add 100g onions → sautĂ© for 3–4 minutes until translucent.
  • Add 10g ginger-garlic paste → sautĂ© for 1 minute until raw smell goes away.

Step 2 — Cook Tomato Base (4 min)

  • Add 120g tomato puree.
  • Cook for 3–4 minutes on medium-low heat until oil separates.

➡️ Reason: reduces tomato acidity & builds umami flavor.


Step 3 — Dry Spice Blooming (30 seconds)

Add the spices:

✔ Vinay’s Shahi Turmeric Powder — 2g

✔ Vinay’s Shahi Coriander Powder — 3g

  • Mix and cook on low flame for 25–30 seconds.

Step 4 — Add Vegetables (2 min toss)

Add:

  • Potato (120g)
  • Carrot (100g)
  • Peas (70g)
  • Cauliflower (150g)
  • Beans (50g)

Add Salt (6–7g) and toss for 2 minutes.

Step 5 — Simmering & Cooking (12–14 min)

  • Add 200–250ml water.
  • Cover and cook for 12–14 minutes on medium flame.

Check: Fork should pass through potato easily.


Step 6 — Final Flavoring (2 min finish)

Lower the flame and add:

Simmer for 2 minutes.

Turn off heat and add:
